    Beef by the side
    We are now butchering beef to fulfill orders for sides.  Many have already been spoken for, but a few are still available (butchered in July).  Buying a side of beef is a cheaper option for those with freezer space, and you specify cutting instructions.  Sides weigh about 300 lbs, and cost $3/lb hanging weight plus processing (about $.90/lb.).

    Garden Produce
    Now in the farm store:  fresh yellow squash, fresh and frozen (chopped) zucchini, and frozen and pickled red beets.

    Chicken butchering Friday– new pasture breed
    Friday we will be butchering a batch of Red & White Ranger chickens– a variety that is bred specifically for pasturing.  Fresh chicken will be available between 3-5 pm.

    We plan to label these Rangers differently in the farm store and request your feedback as you compare them with our standard chicken.

    Stories from the farm
    This week, we filled the smoker with cheddar cheese as usual.  We smoked it as usual, and expected to have usual results.  However, we had quite a surprise! (View picture.)  About half of the blocks we were able to save, but the other half will need to be shredded.  Apparently warm weather is not ideal for smoking cheese…
