Farm Fresh Weekly

Spring has come
This week we had an influx of spring.  3000 strawberry plants arrived, 400 day old chicks were put in the brooder house and a heifer calf was born.  All were very welcome but they did put a end to more leisurely winter days.

Help us think of calf names!
You've helped us in the past... are you feeling creative again?  This year we are in need of names that start with the letter "K".  Names must be five letters or less so that they fit on ear tags.

New production items on the farm
For the last several weeks Daniel has been building equipment that creates strawberry beds, lays down a biodegradable mulch and drip lines and makes transplanting and picking easier.  He has done a great job in showing his creativity and design work and I am very proud of him.

We also bartered for two commercial convection ovens.  Kendra has been using several residential ovens for baking and has experienced all the frustrations of inaccurate heat sensors causing over and under baking.  These ovens will create uniformity in baking and reduce stress on the baker!

Stories from the farm
I have been reading the book "Radical Homemakers" by Shannon Hayes about what really makes us happy.  Obviously, it is not more money to purchase more "stuff" but relationships with family and friends
, spending time with them and sharing what we have.  I have been richly blessed and am very happy.  I encourage each of you to evaluate where you are.  Life is too short to not live it to the fullest.

Cream cheese honey glaze
Kendra:  In a move to make the cinnamon rolls more healthy, I made a cream cheese honey glaze.  Daniel took 10 gallons of milk and made cream cheese this week, and then we started to experiment.  We developed a glaze that we all like using our JaKo cream cheese, honey, vanilla, cinnamon, and salt.  As soon as the current supply in the sales room is gone, we will start using this glaze.

Apple cider vinegar soaked cheddar
We had a customer who told us they used the apple cider vinegar soaked cheddar to make cheese fondue and it was fantastic.  Just wanted to pass that along.

March weather
Our annual mid-March cold and snowstorm came this week.  Years ago when we started milking seasonally, we calved the first of March.  I had never thought much about March storms before that; but after three years of March storms in a row, we learned and moved calving to the first of April.  We have never been sorry.


Stories from the farm
This morning (Sunday) as I was going out to chore, the sun was just coming up big bright and orange.  The song "Running and leaping and praising God" was running through my mind as I got to the chicken house.  I opened the door to let the chickens out and they came running and flying and
I thought to myself, "praising God!"

Slow fermentation of dough
Kendra:  I've been reading up about the concept of "slow fermentation" as perfected by Peter Reinhart, a bread guru.  This process includes soaking flour in multiple ways for 24+ hours before mixing, kneading, and baking. 

Slow fermentation allows enzymes in the flour to break down starches into sugars before the yeast activates the flour, thus greatly increasing the nutrition and flavor of the end product. 

I have found that goods that I bake using this process are also lighter and softer than my previous method.  This new way will also allow me to make 100% whole wheat cinnamon rolls.  It's been really interesting and I plan to begin working these new items into the sales room starting this week.


Last week's Farm Fresh Weekly
This week we were chided a bit for last week's newsletter.  One item talked about obesity and the next item talked about addiction to our cinnamon rolls.  So we might not be that consistent but at least we are honest.  :)
 

Stories from the farm
We had most of our cattle on sunflower stalks with volunteer wheat in them for part of the winter.  This week we received over an inch of rain and the soil became very saturated.  Needless to say the farmer wanted them removed pronto so we spent the day Thursday moving cattle.  Not what was planned but we adjusted.  Now hopefully it will continue to warm up so our grass here at home continues to grow.

Road closing

Starting March 15, the Haven Road north of Haven will be closed to replace a bridge.  For those of you coming from the southeast on Hwy 96, continue on Hwy 96 to Yoder.  Go three miles north on the Yoder Road to the Arkansas River bridge.  Immediately after the bridge, turn right onto Eales Road.  We are two miles east on Eales Road.

Cinnamon rolls
If you have any tendency towards addiction I would advise you not to try these.  Kendra has taken a favorite recipe and adapted it to JaKo standards-- as healthy as possible using all-natural and/or organic ingredients.  You can find them in the freezer under the breads and cookie dough.
 

Stories from the farm
We have cattle on winter pasture a few miles from home, and the other day we received a phone call from a neighbor saying we had a cow out.  We jumped in the truck and went over to find a cow that we could not get close to.  She made sure to stay very far away from us.  We told the neighbor that we did not know who she belonged to, but that it was not one of ours.  Ours always come up to us thinking they will be moved to fresh pasture
.  He was impressed.
